This recipe comes out of the Alaskan Cookbook. It was Nola Hogg’s recipe. Her and her husband used to play cards with Dad and I and Marion and Ed Williams. When we lived in Alaska. I have written Great, by this recipe.
Ingredients
1 c oil
1 tsp. cinnamon
2 c sugar
2 tsp vanilla
3 eggs
2 c grated carrots
2 ½ c flour
1 c pecans
1 tsp soda
1 c drained, crushed pineapple
1 tsp salt
Frosting for Carrot Cake
1 (8oz) cream cheese, softened
2 tsp vanilla
1 bag powdered sugar
1 stick butter
Add nuts if desired
Directions
Mix ingredients together in mixer. Bake in greased Bundt pan at 350 degrees for one hour or until done or try it in a 9x13 cake pan.
Mix in a bowl and add after the cake has been cooled
