Ingredients

¼ c (½ stick) butter or margarine
¼ cup sugar
1 egg
2 c all purpose flour, stir and measured
½ tsp baking powder
4 tsp baking powder
1 c milk

Directions

Cream together butter or margarine and sugar; beat in a well- beaten egg. Add mixed dry ingredients alternately with mild. Bake in greased muffin tins at 375 degrees for 25 minutes. Makes 1 dozen muffins.

Variations

Bacon Muffins; add 3 strips bacon, fried crisp and crumbled, to batter.

Blueberry Muffins; after muffin batter is in tins, divide 1 c blueberries (fresh, frozen or canned) among the 12 muffin tins; carefully push berries down into batter with the back of teaspoon. This method prevents blueberries from sinking to the bottom.

Cheese Muffins; stir ½ shredded cheddar or Swiss cheese into batter along with flour.

Date or Raisin Muffins; add ½ chopped pitted dates or 1/3 cup raisins to batter.

Pecan Muffins; Add ½ cup chopped pecans to batter. After filling cups, sprinkle with sugar, cinnamon and more chopped nuts.
